Training Manuals

You will need copies of the two manuals used for the Seafood HACCP Alliance Basic HACCP Training Programs. These manuals are:

It’s best to have the manuals before you start the Internet course. However, if you need to, you can order them now and start the Internet course while you are waiting for them to arrive. You will need a copy of the FDA Hazards Guide if you plan to attend a Segment Two class, and as a working reference after you have completed your training.

Keep in mind that there are different editions of each of these training manuals. The latest edition of the FDA Fish and Fisheries Products Hazards and Controls Guide is the fourth edition published in June 2021 and has a gold cover. The latest edition of the Alliance HACCP Training Curriculum manual is the 6th edition published in June of 2020 and has a blue cover. The Alliance has also produced a Spanish language version of both manuals. If you need to purchase the latest edition of either of these manuals follow the instructions on this page.

How can I get a copy of the training manuals?

The manuals come in two formats. There are advantages and disadvantages to each format. The PDF files are free, but will not be practical if you have an older computer system and/or printer. The print version allows you to use this material away from your computer and eliminates the time it would take to download and/or print the manual.

PDF (web-based) – You can download the FDA Hazards Guide from the FDA Website as a PDF file of the entire manual or chapter by chapter.  Click here to go to this site. If you have a slow Internet connection you probably don’t want to use this option. You will also need Adobe Acrobat Reader to read the PDF files. It may also take a long time to print the PDF files if your printer is slow or has limited memory. If you don’t have a quality printer, we suggest that you purchase the manuals.

Print – The print versions of both manuals are spiral bound soft cover textbooks that are approximately 300 to 400 pages each. The Hazard Analysis Critical Control Point Training Curriculum Manuals (the English version is Publication Number SGR 132 and the Spanish version is SGR 134) are $45.00 each. The FDA Fish & Fisheries Products Hazards and Controls Guidance (the English version is Publication Number SGR 129 and the Spanish version is SGR 131) are $45.00 each.
