Training Manuals

You will need copies of the 2 manuals used for all of the Seafood HACCP Alliance Basic HACCP Training Programs. The first is the Hazard Analysis and Critical Control Point Training Curriculum Manual and, in its print format, has a blue cover. The second manual is the FDA's Fish and Fisheries Products Hazards and Controls Guidance Manual and, in its print format, has a purple cover.

At this point you need to determine if you have these manuals, if you can borrow them, or whether you need to order them. It's best to have the manuals before you start the Internet course. However, if you need to, you can order them now and start the Internet course while you are waiting for them to arrive. It is not as critical that you have the manuals while you are working on the first 4 Modules. You should definitely wait until you have these manuals before starting to work on Modules 5 through 12.

Please note that both the Seafood HACCP Alliance and Cornell University strongly recommend that you obtain the print version of the manuals to use with the online course. If you plan to attend a Segment 2 class, you will need these manuals, which you can also use as a working reference after you have completed your training.

What if I already have the manuals?

If you have copies of these manuals you don't have to buy them to register for the course.

Can I borrow a set?

Sure! These 2 manuals were given to everyone who completed one of the 3-day Seafood HACCP training courses conducted over the past 4 years. If you can get a copy of these manuals from someone in your firm or from a friend, you don't have to buy them to register for the course.

Note: There are three different editions of each of these training manuals. The latest edition of the FDA Fish and Fisheries Products Hazards and Controls Guide is the third edition published in June 2001 and has a purple cover (older editions have either a red or green cover). The latest edition of the Alliance HACCP Training Curriculum manual is the fourth edition published in November 2001 and has a blue cover. How can I get a copy of the manuals?

If you do not have copies of these manuals, you will need to get them before you begin this internet course. The manuals come in 2 formats. There are advantages and disadvantages to each format. The PDF files are free but will not be practical if you have an older computer system and/or printer. The print version allows you to use this material away from your computer and eliminates the time it would take to download and/or print the manual.

PDF (web-based)
You can download each of these manuals in PDF (portable document format) format by clicking here. These PDF files are very large and are likely to take a long time to download, if you have a modem speed of 56k or lower you probably don't want to use this option. You will also need Adobe Acrobat Reader 2.0 or above to read the PDF files. Remember that if you want to print out a copy of the manual after you have downloaded the files, this can take quite a bit of time depending on the kind of printer you have. If you don't have a quality printer, we recommend against printing out these files.

Print
The print versions of both manuals are approximately 300 pages each, spiral bound, softcover textbook. The HACCP: Hazard Analysis Critical Control Point Training Curriculum Manual SGR 120 is $20.00.
